Eggs are a magical ingredient for all multisport athletes. They are cheap and packed with important nutrients and protein. Couple that with the power of broccoli and the deliciousness of cheddar cheese and you have an incredible power snack. Don’t be fooled by the term “muffin” in the title. There is no flour or really anything resembling a muffin in this snack besides the obvious shape. If you have never consumed an egg muffin I advise you to try these 3 ingredient cheddar broccoli egg muffins.

3 Ingredient Cheddar Broccoli Egg Muffins
Feel free to sub in any veggie but the broccoli packs a great nutrient boost.
- 4 eggs
- 1 cup steamed broccoli
- 0.5 cup shredded sharp cheddar cheese
- 0.5 tsp salt & pepper to your liking
Preheat oven to 375 degrees. Coat a 6 hole muffin tin with oil.
Chop broccoli and place it in a bowl with the eggs and sea salt + pepper if you desire those. Whisk together.
Pour egg mixture into muffin tins and divide cheese evenly among them.
Bake for 12-15 minutes, or until the eggs are set.
