Those of you who know me know that I am a huge breakfast lover. Even before I took up multisports and worked out every morning, I loved nothing more than a massive breakfast to start my day. That being said, now I focus a little more on what I eat for breakfast rather than just sheer quantity. So when I came across this recipe for Banana Blueberry Almond Butter Pancakes from, I knew it was going straight into my breakfast arsenal.

These breakfast pancakes are filled with delicious ingredients that are healthy for any multisport athlete. Eggs, oats, bananas, blueberries and almond butter are all food staples that every athlete uses pretty regularly. Even if you don’t like almonds or almond butter, pretty much any nut butter will work in this recipe.

Banana Blueberry Almond Butter Pancakes

Cook Time 7 minutes

  • 1 Egg
  • 1 tbsp Rolled Oats
  • 1 Banana (mashed)
  • dash Cinnamon
  • dash Salt
  • 0.5 tsp Vanilla Extract
  • 0.5 cup Blueberries
  • 1 tbsp Almond Butter


  1. Heat a cooking pan over medium heat and spray with non-stick cooking spray.

  2. Mash a banana in a bowl. Add the egg, rolled oats, salt, cinnamon, and vanilla mixing thoroughly.

  3. Pour small amounts of the mixture into the heated cooking pan (usually cooks 3 pancakes).

  4. Add the blueberries on top while the mixture cooks. Flip over after 2 minutes or once the pancake starts taking shape. Cook for another 2 minutes.

  5. Add the pancakes to a plate and top with shaved coconut, slivered almonds, and almond butter.
